My husband’s family runs a local orchard and farm market and is our source of fresh produce throughout summer. They gave us our fall dose of apple cider, apple butter, pumpkins and 1/2 peck of fuji apples. With this many apples, I wanted to do some cooking with them so I found a dessert recipe for Caramel Apple Crisp with the perfect proportions for two – just right for the hubby and I. After spending the evening at a Halloween family fair at our metroparks last night, this was the perfect ending to a crisp fall day! Warning – this recipe is very rich & decadent!
Ingredients:
- 3 medium apples, peeled and sliced
- 2 tablespoon flour
- 4 tablespoons brown sugar
- 2 tablespoon butter
- 4 tablespoons quick-cooking oats
- 1/4 teaspoon ground cinnamon
- 2-3 heaping tablespoons caramel topping
- vanilla ice cream (optional)
Directions:
Place apple slices in two small, greased ramekins. Spoon caramel topping over the apples. In a bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Add oats and cinnamon. Sprinkle over apple slices and caramel. Bake, uncovered, at 350° for 35-40 minutes or until tender. Serve with vanilla ice cream and enjoy!
Step One – Place apple pieces in two small, greased ramekins.
Step Two – Spoon caramel topping over the apples.
Step Three – In a bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Add oats and cinnamon.
Step Four – Sprinkle over apple slices and caramel.
Step Five – Bake, uncovered, at 350° for 35-40 minutes or until tender.
